Happy Spicy Chocolate Almonds

I love a good nibbler, but for some reason the smaller the bite the more expensive the price! Really? I have to admit, I am a sucker for these last minute pretty shiny add on purchases while standing in line to check out. The funny thing is I don’t even enjoy them… I place them on my food shelf like a trophy. Too pretty to eat! This is the perfect recipe…

Nibbler.. Check!  Cheap… Check!  Easy… Check!                                                                                                                                                Impressive… Check Check!

Ingredients: 

  • 16 oz dark chocolate
  • 2 TBSP cayenne (add less or more for desired heat)
  • 16 oz raw or roasted (unsalted) almonds
  • 1 cup Happy Hemp

 Directions: 

  1. Melt chocolate in a double boiler. Once melted turn   down to a simmer.
  2. Stir in cayenne to the melted chocolate.
  3. Add 1/4 cup of almonds to chocolate at a time. Make sure each almond is covered in chocolate
  4. Remove almonds one by one and place on a cookie tray covered in wax paper.
  5. Lightly sprinkle each almonds with Happy Hemp
  6. Place tray in refrigerator for 5 min or until chocolate hardens.
  7. Enjoy!

Happy Chocolate Chip Cookies

Do you have picky eaters in the house? This is a clever way to get you little one’s to eat their vitamins.
These cookies are super good and not overly sweet.

Ingredients: 
  • 1/2 cup butter softened
  • 1 cup brown sugar
  • 1 egg
  • 3 teaspoons of vanilla
  • 1 cup plus 2 tablespoons of flour
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon salt
  • 1/2 cup hemp
  • 6oz of chocolate chips

 Directions: 

  1. Preheat oven to 350 degrees
  2. Cream butter and sugar until fluffy, add egg and vanilla. Mix until combined.
  3. Sift flour, baking soda, salt together. Add hemp in flour mixture.
  4. Combine flour mixture into butter and sugar. Once combined fold in chocolate chips.
  5. Place large tablespoons of batter on an ungreased cookie sheet. Bake 5 minutes and then rotate pan, bake another 5 minutes (may have to adjust to your oven).
  6. Enjoy!

Happy Salmon Tacos

If I had to chose one category of food I had to live on for the rest of my life…. hands down it would be Mexican! I have a love affair with all things hot and spicy! This yummy recipes is inspired from my college days of slinging burritos at Chuy’s.

Margaritas Por Favor!

Happy Tacos. Happy Fish. Happy Hemp.

Ingredients: 

  • 8oz salmon
  • Tortillas flour or corn
  • 1/2 cup purple cabbage chopped
  • 1 jalapeno, seeded
  • 1/2 cup happy hemp
  • 1 garlic clove
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon white wine vinegar
  • 1 tablespoon chopped fresh dill
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon white pepper
  • kosher salt
Directions:
Dressing:
  1. In a food processor, place jalapenos and garlic, turn on processor and process until the jalapenos and garlic are minced fine. About 15 seconds.
  2. Remove food processor lid and add in mayonnaise, sour cream, vinegar, dill, garlic powder, and pepper. Turn on the food processor and process just until combined.
  3. Transfer to a bowl and season to taste with salt. Chill for 30 minutes. Stir once more and adjust seasoning if needed
Tacos:
  1. Grill or Bake Salmon for approx 10min. Note: Do not over cook.
  2. Warm tortillas
  3. Place salmon and cabbage in tortillas.
  4. Lightly drizzle dressing on taco.
  5. Enjoy!

Happy Hemp Bark Biskits

Oliver (Golden) and Mocha (not golden) are my co-pilots in life. I love to give them treats, but hate the fatty ingredients in them. This is a great way to give them food praise without the lb’s.

Ingredients: 

  • 2 tablespoons Happy Hemp
  • 1 cup all-purpose flour
  • 1/4 cup wheat germ
  • 1/4 cup brewer’s yeast
  • 1 teaspoon salt
  • 1 1/2 tablespoons canola oil
  • 1/2 cup low-sodium canned chicken stock, plus more for brushing

Directions:

  1.  Preheat oven to 400 degrees. In a medium bowl, whisk together, Happy Hemp,  flour, wheat germ, yeast, and salt; set aside
  2.  Place oil in a large bowl. Add stock and flour mixture in three alternating batches, beginning and ending with stock. Mix well.
  3.  On a lightly floured work surface, roll out dough to about 3/8-inch thick. Shape biscuits using a dog-bone-shaped cookie cutter or by cutting around a store-bought dog bone with a butter knife.
  4.  Write names with toothpick if desired.
  5. Enjoy!

Happy Take-Out Noodles

Growing up my mom worked full time and had 2 kids with no help! Still trying to figure out how she pulled that off.

As much as she was and is a great chef, take out was always easier!

Good thing cause… I loved take out night! Actually, I loved the Chinese take out box.. you know the one with the cute metal handle and red writing. Best packaging ever invented!

These noodles will please the take out in you… cute packaging not included.

Ingredients:

  • 1lb Chinese egg noodles (1/8” thick)
  • 2 Tablespoons sesame oil, plus a splash
  • 3 1/2 Tablespoons soy sauce
  • 2 Tablespoons rice vinegar
  • 2 Tablespoons Happy Hemp
  • 2 Tablespoons sesame paste
  • 1 Tablespoon smooth peanut butter
  • 1 teaspoon sugar
  • 1 Tablespoon finely grated ginger
  • 2 teaspoons minced garlic
  • 2 teaspoons garlic paste
  • 1 teaspoon chile paste

 Directions: 

  1. Bring a large pot of water to a boil. Add noodles and cook until barely tender, about 5 minutes. Drain, rise with cold water, drain again and toss with a splash of sesame oil.
  2. In a medium bowl, whisk together sesame oil, soy sauce, rice vinegar, sesame paste, peanut butter, Happy Hemp, sugar, ginger, minced garlic, garlic paste and chili paste.
  3. Pour the sauce over the noodles and toss. Transfer to serving bowl.
  4. Enjoy!

Happy Chocolate Banana Bread

OMG this is so good if I do say so myself…and I do! My friends love when I do a round of recipes cause I pawn off food and make them tell me what they think. This is the one recipe I get asked to make all the time.

I am known to eat for breakfast… Really!

 Ingredients:  

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 cup Happy Hemp
  • 1 stick unsalted butter, softened
  • 3/4 cup sugar
  • 2 large eggs
  • 1 1/4 cups mashed very ripe bananas (about 3 medium)
  • 2/3 cup plain yogurt
  • 1 teaspoon pure vanilla extract
  • 6oz semi-sweet chocolate chips

Directions: 

  1. Preheat oven to 375 with rack in middle. Butter loaf pan.
  2. Stir together flour, baking soda, cinnamon, Happy Hemp, and salt.
  3. Beat together softened butter and sugar in a medium bowl with an electric mixer at medium speed until pale and fluffy. Beat in eggs 1 at a time until blended. Beat in bananas, yogurt, and vanilla (mixture will look curdled)
  4. With mixer at low speed, add flour mixture and mix until just incorporated. Fold in the chocolate chips. Pour batter into loaf pan, smoothing the top.
  5. Bake for 35-40mins until loaf is golden. Check with a wooden pick, if inserted in center of cake and comes out clean banana bread is done. Cool loaf in pan for 30mins, then turn out onto rack and cool completely.
  6. Enjoy!

Happy Farmers Market Salad

There is nothing like a great salad with fresh ingredients from your local Farmers Markets. Even the most kitchen challenged can make this quick, easy, healthy and delicious salad. Great for a meal or along side your favorite dish. Have fun with this dish and add any your favorite’s to make it your own!

P.S. For a great stand alone meal add a can of Organic Garbanzo beans for an extra kick of Protein in addition to your Happy Hemp.

Ingredients: 

  • 1 Cucumber
  • 2 Tomatoes
  • 1/2 Happy Hemp
  • 1/4 Basil
  • 1 Avocado
  • Salt and Pepper
  • Olive Oil
Directions: 
  1. Dice Cucumber, Tomatoes and  Avocado into a bowl
  2. Chop up Basil and add to above.
  3. Add Happy Hemp
  4. Drizzle Olive Oil and Mix together.
  5. Salt and Pepper to taste
  6. Enjoy!

Happy Hemp Peanut Dressing

I am a condiments girl. I love the dips more than the actual food. Happy Hemp Peanut dressing is perfect for veggies, spring rolls, noodles and more! Love to keep in the fridge for a quick easy snack.

Ingredients:

  • 2 Tablespoons sesame oil, plus a splash
