Happy Cornbread with Jalapenos and Cheese

Cornbread is the perfect compliment to a bowl of soup on a cold rainy day. We have had many this past week.

I love adding some extra ingredients to give it a little extra something. Tonight this bread will be accompanying a bowl of pipping hot homemade chili.

  • Jiffy cornbread mix is simple and easy. Why reinvent the wheel? You can pick up at any grocery store.
  • Follow the simple directions on the box. Once the cornbread is mixed… Add your extra items.
  • 1/4 cup chopped jalapenos, 1/4 cheddar cheese and 1/4 Happy Hemp. Mix into the cornbread.
  • Bake per box instructions.
  • Ready to eat hot out of the oven in no time.
  • Enjoy!!

Happy 12 days of Local Christmas

12 days of Christmas is not exactly the most logical gift guide in 2011, but with some modern day translation… I think we can manage to come up with some local alternative options!!

  • On the first day of christmas, my true love gave to me a, Partridge in a Pear Tree: In the spirit of fruit, instead give the gift of Argus Cidery (arguscidery.com). This yummy brew is a great way to get the Christmas night started. Also makes for a lovely hostess gift in lieu of wine.
  • On the second day of Christmas, my true love gave to me, Two Turtle Doves: If you have a foodie in your house, who loves game may I suggest Dai Due (daidueaustin.net) is an amazing purveyor of meat, veggies and charcuterie. Also located at the Farmers’ Market. Yum!!

  • On the third day of Christmas, my true love gave to me, Three French Hens: Texas is not known for French food, but they are known for some mighty fine Tex-Mex. A gift certificate to Chuy’s is always welcome. Dot please!
  • On the fourth day of Christmas, my true love gave to me, Four Calling Birds: Calling on you to give a home to a four legged in need. Instead of buying… I say adopt. Austin Pets Alive (austinpetsalive.org) is full of sweet loved ones in need of cozy homes. Also make a donation in the name of a loved one is a wonderful gift option this year. Animals equal happiness!
  • On the fifth day of Christmas, my true love gave to me, Five Golden Rings: Check out Shaesby (shaesby.com) for the perfect sparkle gift for the special lady in your life.
For the boys my go to is D&A (dandabrothers.com).  Baubles and Bling!!
  • On the sixth day of Christmas, my true love gave to me, Six Geese-a-Laying: In the spirit of laying around and relaxing, love a day at the Spa. Milk and Honey spa (milkandhoneyspa.com) is a vacation without having to pack or deal with the airport. Exhale!
  • On the seventh day of Christmas, my true love gave to me, Seven Swans-a-Swimming: Treat the girls to a swim in the best drinks in Austin. La Condessa (lacondesaaustin.com). May I suggest the watermelon-elderflower martini….Perfectly de-lish!
  • On the eighth day of Christmas, my true love gave to me, Eight Maids-a-Milking: Get your milk on with some great cheese from Antonelle’s Cheese shop (antonellischeese.com). PS gift basket!
  • On the tenth day of Christmas, my true love gave to me,  Nine Ladies Dancing: Tickets to the ballet… Can’t get more fabulous than that. Take your honey to the Austin Ballet (balletaustin.org). The nutcracker is the perfect holiday ballet. Very chic!
  • On the tenth day of Christmas, my true love gave to me, Ten Lords-a-Leaping: You can’t do graceful leaps without the perfect shoes. By George (bygeorgeaustin.com) has the latest in fashionable and gift certificates. Perfect from head to toe!
  • On the eleventh day of Christmas,My true love gave to me, Eleven Pipers Piping: Instead of promoting smoking… give the gift of health!  Happy Hemp (happy-hemp.com) is the perfect stocking stuffer. Happy Gifting!!
  • On the twelvth day of Christmas, my true love gave to me,Twelve Drummers Drumming: Waterloo (waterloorecords.com) is my go to for music. I don’t know anyone who does not love music. Records too!!

Happy Chia Blackberry Super Smoothie

I get asked a lot: What if I already eat chia seeds? Can I eat Happy Hemp too? Yes you can!! Hemp seeds are great with almost anything, even other super foods. Today’s smoothie has both Happy Hemp and chia. The more the merrier!

Ingredients:

  • 1/2 Cup coconut water
  • 1/2 Cup vanilla yogurt
  • 2 TBSP Happy Hemp
  • 2 TBSP chia seed
  • 1/4 Cup frozen blackberries

Chia pet is optional.

Directions:

  1. Blend all ingredients into a blender.
  2. Pour into a fancy glass…. Just because you can!!
  3. Enjoy!

Happy Stuffed Green Peppers and Fuego de Manos

I consider myself a connoisseur of sorts when it comes to peppers. I have lived in New Mexico, California, Mexico and now Texas. I have grow up my entire life eating and loving chilies. I know the 101 when it comes to chili rules and regulations. I have cooked with enough spice to know and respect the mighty little peppers. So I am horribly embarrassed to share this tale of how the chili kicked my ass!! I do so only for you my friend, may you NEVER experience (insert dramatic music) Fuego de Manos!!

Last week I visited some friends in Santa Barbara. They had planned a dinner party and invited all their friends (none who I know). Being that I love to cook, I offered my help to assist the chef. My job was to peel the skin off the sweated chilies… a job I had done a thousand times. What I had not done is taken on more than 6 chilies at a time. It was me vs about 30 chilies. I stupidly did not think that this could have been an issue and started my task. I did not take a break other than to sip my wine and never noticed anything out of the norm. After my task was executed perfectly, I thoroughly washed my hands.

By the time the guest started to arrive, I tiny burn started to creep up. Like having a small cut on your finger when lemon juice makes contact. Slowly it progressed into a very uncomfortable dulling throb. Mind you the house is slowly starting to fill with guest… whom I have never met. As all this is going on, I simply keep sipping my wine… smiling… “yes so nice to meet you, too!!”… smile some more… acting as if I have not a care in the world. By the time the last guest arrived, my hands were in full nuclear meltdown. My composure had left stage left… the smile had turned into more of a teeth death grip and I was now wrapping my leg around the other like I had to pee my pants. Thinking somehow that killing the circulation in my legs would help my hands. I was desperate and was starting to break down!!

Unless I was running my hands under cold water, I was in excruciating pain. The cold water would provide temporary relief, but 10ish min later it would return. The chef was horrified and his guilt was reviling my pain. I sat through dinner with a bowl of ice water next to me. I would rotate soaking my hands while barely able to eat. At this point the entire conversation at the dinner table was about my hands otherwise known as (insert dramatic music) Fuego de Manos.

After dinner the pain had moved into a something I words cannot describe. I would have cut my hands off, if that was an option. Sam started googling for remedies. She found several and we started checking them off the list.

  1. Wash hands thoroughly with dish soap. We washed my hands with dish soap, bar soap, Dr Bronners and I think even maybe laundry detergent.
  2. Aleve. This was not on google, but a pain reliever seemed smart. 2 down the hatch.
  3. Soak hands in milk. Bowls were filled of milk and cream. We had to put ice in the bowls to cool the milk, so I could handle keeping my hands in for more than a minute.
  4. Alcohol. We never defined they type of alcohol, but never the less one bowl of tequila and another of whiskey were filled. At this point, I was in such a miserable state I also started doing shots of tequila. Seemed fitting to go with the chilies.
  5. One of the guest suggested chia seeds. Nothing against chia, but if I was going to be cured… Clearly it was going to by Happy Hemp and not chia. I tried both. Neither worked.
  6. There were a million other suggestions of what to do… Some were “R” rated, but we did discuss going to the emergency roon. I shot that down with more tequila.

The only thing left to do was try to sleep and ultimately wait for the burn to go away. By then all the guest had gone home…Thank God!!  I had moved into a crazy state of laughing hysterically, really what else was there left to do at that point? As I readied myself mentally that I needed to go to bed, Sam prepared oven mitts of frozen peas for my slumber. Needless to say, I spent the entire night in the bathroom with my hands running under cold water. I can’t remember when I finally crawled into bed…I think my body had finally given up from shear exhaustion. Somehow in my crazy state a photo was snapped. I love how even in my pain, my pj’s match the William and Sonoma oven mitts.

When I woke the next morning…. I was dazed and confused. I had to think for a second why was I laying in a bed of peas? The horrible memories of the night before came rushing back. Did my hands hurt? I had to physically look at my hands to make sure they were even still at the end of my arms. My hands were very pink for the next day or so, but the burn was gone. It had been replaced by a feeling of being lightly asleep… tingles. I was just grateful the burn was gone!!

In honor of the great chili god, I have a prepared a stuffed green chili pepper recipe for today. You might think…WHAT? How can you entertain even saying the word pepper? I am a girl who gets back on the horse…however my friends…. spread the tale of (dramatic music) Fuego de Manos. This is could happen to you!!

Happy Stuffed Green Peppers

Ingredients:

  • 6 green bell pepper
  • 1 pound ground beef
  • 1/3 cup chopped onion
  • salt and pepper to taste
  • 1 can whole peeled tomatoes, chopped
  • 1 teaspoon Worcestershire sauce
  • 1/2 cup uncooked brown rice
  • 1/2 cup Happy Hemp
  • 1/2 cup water
  • 2  cans condensed tomato soup

Directions:

  1. Bring a large pot of salted water to a boil. Cut the tops off the peppers, and remove the seeds. Cook peppers in boiling water for 5 minutes; drain. Sprinkle salt inside each pepper, and set aside.
  2. In a large skillet, saute beef and onions for 5 minutes, or until beef is browned. Drain off excess fat, and season with salt and pepper. Stir in the tomatoes, rice, 1/2 cup Happy Hemp, 1/2 cup water, and Worcestershire sauce. Cover, and simmer for 15 minutes, or until rice is tender. Remove from heat.
  3. Preheat the oven to 350 degrees F. Stuff each pepper with the beef and rice mixture, and place peppers open side up in a baking dish. In a medium bowl, combine tomato soup with just enough water to make the soup a gravy consistency. Pour over the peppers.
  4. Bake covered for 25 to 35 minutes.
  5. Enjoy!!

Happy Gluten-Free

Until about a year ago, I had never heard about a gluten-free diet. I thought it was more of a trend than an actual illness. I was prompted to do some research to educate myself on the facts….

The What: Gluten is a protein found in wheat, barley, rye, kamut and oats. So that means pizza, pasta, bread, beer, etc. Basically, gluten is found in most items that we eat on a daily basis. Over 15% of the US population suffers from a gluten intolerance.



The Why: Is this a new disease? Apparently not, just mis-diagnosed. A few of the common symptoms associated with the illness is weight loss and gain, gastro-intestinal problems (from blotting to diarrhea), depression, headaches. Making it extremely hard to identify. Who has not had one if not all of those issues?

The Breakdown: Being that Happy Hemp is gluten-free, I am learning more about the seriousness of the illness. The severity ranges from intolerance to gluten to the extreme of celiac disease (the most extreme of the illness).

The Eat: These days there are a plethora of amazing substitutes to avoid gluten. Check out your local farmers’ market for amazing breads and pasta. Also most grocery stores carry one or two options. Happy Potato Chowder

Nothing warms you up like a homemade bowl of soup. I love how the smell makes everything feel cozy. So when I make a pot of soup, I am a free styler. I don’t think I have ever made the same soup twice in my life. I always start with the main ingredients and then just add whatever is in the house. Little bit of this and little bit of that. Here are some additional ingredients that can add flavor… ham, leeks, bacon, cheese and so on.

So let’s start chopping!!

  • 3 or 4 Potatoes. Scrub clean. Peel  and chop.
  • 1 Clove fresh garlic. Chopped
  • 2 Stalks celery. Chopped.
  • 1 Onion. Chopped.

Next grab a stock pot. Drizzle olive oil and add the onions, celery and garlic over medium heart. Cook until onions are translucent. Good smells start!!

Add in the potatoes. Pour in chicken (you can use veggie stock) stock until the top of the ingredients are covered. Bring to boil and simmer for about 20 min or until potatoes are soft.

Remove from heat and lightly mash up the mixture. You want the mixture to be chunky.

Place back on low heat. Add in a can of corn (drain water), salt and pepper and 1 cup of half and half. Stir together.

Cook for another 10 min. Place in your soup bowl and add your Happy Hemp on top. Adds a great warm nutty flavor!!
