				<content:encoded><![CDATA[<p style="text-align:center;">BBQ, beer, and skeeter season are finally here! It&#8217;s time to dust off the picnic tables, get out your plastic party ware and fire up the grill! One of my all-time favorite past times is barbecuing in the backyard with old friends and reminiscing on memories. It doesn&#8217;t matter how hot or humid it is, being with my great company and grilling as the sun goes down is what life is all about.</p>
<p style="text-align:center;">Sometimes we forget that BBQ&#8217;s don&#8217;t have to be loaded with unwanted greasy calories. I&#8217;ve  been working my ass off, literally, spinning, running, and yoga-ing, trying to get bikini ready! I&#8217;m ditching the chips, fries, and potato salad and opting for a big green <a title="Happy Kale Brussels Sprouts Salad" href="http://happyhemp.wordpress.com/2013/04/16/happy-kale-brussels-sprouts-salad/">salad</a> with all my favorite local veggies! There are plenty of healthy alternatives to beef burgers&#8211; a la lamb, turkey or salmon that are just as (if not more) delicous! You can have fun topping it all off with homemade condiments. I love using condiments like <a title="Happy Artichoke. Happy Me." href="http://happyhemp.wordpress.com/2012/03/12/happy-artichoke/">dill mayo</a>, <a title="Happy Salmon Sheet Dinner" href="http://happyhemp.wordpress.com/2012/03/16/happy-sheet/">wasabi mayo</a>, or  <a title="Happy Artichoke with Almond Dip" href="http://happyhemp.wordpress.com/2011/07/13/happy-artichoke-with-jalapeno-dip/">almond dip</a>.</p>
<p style="text-align:center;"><span style="text-decoration:underline;">Ingredients</span>:</p>
<p>1/2 lb ground lamb</p>
<p>3 cloves garlic</p>
<p>1/4 cup leeks</p>
<p>1 tbsp ghee</p>
<p>2 tbsp Happy Hemp seeds, raw</p>

<p>1. Sauté garlic, leeks &amp; ghee until golden brown</p>
<p>2. Mash above ingredients along with Happy Hemp seeds into ground lamb</p>
<p>3. Hand form into two large patties or three sliders</p>
<p>4. Toss on the grill &amp; cook til desired</p>

It doesn&#8217;t even seem like I&#8217;m working when I&#8217;m out there with my Happy Hemp girls. We are lucky enough to meet people from all walks of life, traveling from all over the United States. I have met some of the kindest, most sincere people that truly just want to help me succeed. It&#8217;s such a incredible feeling  to have so much support from both the local community and vendors that travel in each weekend to offer their speciality item.</p>

This year I encourage you to start a new tradition. Choose to spend the day making memories, because those are the priceless treasures you simply cannot forge or buy. While growing up often means moving away from the ones you love, make a sincere effort to spend the day with your special lady.</p>
<p style="text-align:center;">Anything from a picnic at the park, planting a new garden, riding bikes to your favorite lunch café, to volunteering at a local charity to help the less fortunate. It&#8217;s safe to say I probably eat there about once a week. I kind of consider their chicken burrito bowl comfort food, but this time I was looking for a way to keep the protein but ditch the calories. I stumbled upon this recipe on Pinterest, of course, one of my absolute favorite places to find  new recipes! For those of you who use Pinterest, you can agree that it is the worst site to browse when you are hungry!! I made the mistake of looking on Pinterest mid-afternoon when my stomach was hunnngry like the wolf&#8211;cue the Duran Duran song! The recipe is super quick and easy, plus it&#8217;s great to make for a group because you can customize the add-ins.</p>

<p style="text-align:center;"><strong>Ingredients: </strong></p>
<p>1 cup quinoa</p>
<p>1 tbsp olive oil</p>
<p>1/4 cup minced onion</p>
<p>2 clove garlic, minced</p>
<p>2 cans (15 oz each) black beans, rinsed and drained</p>
<p>1/4 cup chopped fresh <a title="Happy Guacamole" href="http://happyhemp.wordpress.com/2011/08/03/happy-guacamole/">cilantro</a></p>
<p>1/4 tsp chili powder (mild)</p>
<p>Pinch of cayenne pepper (spicy)</p>
<p>1/4 cup fresh lime juice</p>
<p>1 cup shredded lettuce</p>
<p>2 tbsp Happy Hemp toasted seeds</p>
<p>Salt</p>
<p style="text-align:center;"><strong>Suggested Optionals Toppings:</strong></p>
<p>Grated cheddar or jack cheese                                             Greek <a title="Happy Greek Yogurt, Honey and Allergies" href="http://happyhemp.wordpress.com/2012/01/03/happy-greek-yogurt-and-honey/">yogurt</a></p>
<p>Pico de gallo                                                                                Corn salsa</p>
<p>Diced  tomatoes                                                                         Hot sauce</p>
<p>Sliced avocado                                                                            Guacamole</p>
<p>Corn</p>
<p style="text-align:center;"><strong>Directions:</strong></p>
<p style="text-align:left;">1. Rinse the quinoa thoroughly in a mesh strainer or sieve, drain.</p>
<p style="text-align:left;">2. In a saucepan, bring the quinoa in 2 cups of water to a boil, then reduce heat to a low simmer. Cover the pot &amp; let simmer for about 20 minutes (until water is absorbed &amp; grains are tender).</p>
<p style="text-align:left;">3. While quinoa is cooking, heat 1 tbsp of oil in another saucepan over medium heat.</p>
<p style="text-align:left;">4. Combine minced onion &amp; garlic into the saucepan and saute for a few minutes till it softens and begins to turn brown.</p>
<p style="text-align:left;">5. Add the black beans to the pot of onions along with 1/2 cup water, cilantro, chili powder &amp; cayenne pepper.</p>
<p style="text-align:left;">7. Bring the beans to a boil, then reduce heat to medium low. Let the beans simmer for 15 minutes (until liquid is mostly evaporated).</p>
<p style="text-align:left;">8. Stir in 2 tbsp of fresh lime juice. Season with salt to taste.</p>
<p style="text-align:left;">9. When the quinoa is fully cooked, remove from heat and fluff with a fork &amp; mix in cilantro &amp; lime juice. Season with salt to taste.</p>
<p style="text-align:left;">10. Assemble your  bowls with cilantro lime quinoa, black beans, shredded lettuce, corn salsa, avocado, sour cream, pico de gallo, and Happy Hemp toasted seeds. Enjoy!</p>

In my true optimistic state of mind, no matter what the situation is I try to hone in on at least one positive thing. But I mean, is there really a silver lining to being eaten alive by mosquitos? NO! I guess they must think I&#8217;m sweet, right? We all know that peppermint is a life savor when it comes to bad breath, but you might not know it has many other beneficial elements like it&#8217;s ability to cool bites and stings?! COOL! It is one of the most versatile aromatic herbs, hands down.</p>
<p style="text-align:center;"><strong>Here are some other <em>cool</em> facts about peppermint and its oil:</strong></p>
<p>1. <strong>Happy Health-</strong> it is compromised of vitamins A, C, <a title="Happy Chia Blackberry Super Smoothie" href="http://happyhemp.wordpress.com/2011/12/15/happy-chia-blackberry-smoothie/">omega-3 fatty acids,</a> and contain minerals including potassium, iron, magnesium, calcium, and copper. <div>5. Mix thinly sliced kale &amp; shredded brussels sprouts in a large bowl.</div>

<div>6. In a small skillet, heat coconut oil on medium &amp; add macadamia nuts, stirring frequently  until golden brown in spots (about 2 mins).</div>

<div>7. Transfer nuts to a paper towel-lined plate &amp; lightly sprinkle with salt.</div>

<div>8. Slowly whisk remaining olive oil in a cup into lemon juice mixture.</div>

<div>9. Season dressing to taste with salt &amp; pepper.</div>

<div>10. Add dressing &amp; cheese to kale mixture; toss to coat. Season lightly with salt &amp; pepper.</div>

				<content:encoded><![CDATA[<p>I am so ghee-dy with excitement to share with you the most amazing South Asian butter&#8211; ghee! It is one of my top 5 favorite things in the universe, seriously. There is no other butter-esque ingredient I would rather use! On my recent trip to Houston, I happened upon an enchanting indian-casbah restaurant and met the ghee of my dreams. <a href="http://www.pondichericafe.com">Pondicheri</a> was the matchmaker of my new love affair! Upon purchase all I could think about was &#8216;when am I going to be home and what am I going to cook?!&#8217;  Then that night, I had a dream. I dreamed of ghee-nie! When I got home, I decided to take advantage of it being spaghetti squash season and make spaGHEEtti squash boats!!</p>

<p style="text-align:center;"><strong>Ingredients: </strong></p>
<p>1 Spaghetti squash</p>
<p>2-3 Tbsp ghee (can be found at Whole Foods or Central Market)</p>
<p>3 Cups spring greens (kale, arugla or spinach)</p>
<p>3 Tbsp olive oil</p>
<p>1 Tbsp balsamic vinegar</p>
<p>2 Tbsp Happy Hemp raw seeds</p>
<p>Avocado</p>
<p>Ripe tomato</p>
<p>Lemon</p>
<p>Salt &amp; Pepper to taste</p>

<p style="text-align:center;"><strong>Directions:</strong></p>
<p>1. Preheat oven to 350°.</p>
<p>2. Cut spaghetti squash in half (end to end) &amp; clean out inside with spoon (use your Halloween carving skills).</p>
<p>3. Rub inside of the squash with ghee &amp; add generous amount salt &amp; pepper.</p>
<p>4. Bake for about 45 minutes or until the inside is soft to touch (use fork to test).</p>
<p>5. While squash is baking, wash/dry spring greens for salad &amp; place in large mixing bowl.</p>
<p>6. In a separate small bowl or cup whisk olive oil, balsamic vinegar, freshly squeezed lemon juice, salt &amp; pepper to taste &amp; toss with spring greens.</p>
<p>7. Dice avocado &amp; tomato into cubes &amp; set aside.</p>
<p>8. When squash is ready, scrape the inside with fork. It will look just like spaghetti.</p>
<p>9. Using the squash boat, move the spaghetti squash inert to one side &amp; put spring greens on the other side.</p>
<p>10. Top off with avocado, tomato, &amp; Happy Hemp raw seeds.</p>
