I love simple easy salads in the summer. They are easy to make and the combinations are endless. This is great to enjoy alone or would make a great addition to the main course.

- 1 Cup Green Beans
- 1 Cup Baby Potatoes halved
- 1 Cup Cherry Tomatoes halved
- 1/4 Cup Happy Hemp
- Olive Oil
- Salt and Pepper
- Snap ends off and Steam Green Beans for 10 min or until brilliant green. Cool in an ice bath.
- Place in a bowl tomatoes, potatoes and happy hemp.
- Drain green beans and cut into 1 inch pieces. Add to mixture.
- Lightly drizzle olive oil and salt and pepper to taste. Mix and Serve.
