Happy Veggie Spaghetti and a side of Meatballs

I love fall cooking. I tend to go for the hearty dishes that hug your insides. Plus they always make the best left overs. Growing up as a kid Spaghetti was my absolute favorite meal! I think I may have been obsessed with the movie Lady and the Tramp.

The great things about Spaghetti sauce is it is whatever you want it to be. Every time I make this dish it is different. You can make it all veggie or add meat. It is up to you and what you are feeling. Tonight was a clean out all the veggies in the fridge sauce. I made meatballs on the side as an option for my meat lover guest. All diets and taste are addressed. All are Happy!!

Mushrooms. Onions. Squash.

Ingredients Sauce:

  • 1 box pasta
  • 1 large onion chopped
  • 2 yellow squash chopped
  • 1 cup mushrooms chopped
  • 1 clove garlic chopped
  • 2 tablespoons olive oil
  • 2 cans 6 ounce tomato paste
  • 1 can 8 ounce tomato sauce
  • 1 can 14 ounce stewed tomatoes
  • 1 tablespoon Italian seasoning
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • 1 cup water
Directions Sauce:
  1. Heat olive oil in pot. Cook pasta per directions.
  2.  Add the onion, squash, and garlic and saute until the onion is tender, about 5 minutes.
  3. Add the tomato paste, tomato sauce, stewed tomatoes, seasonings, and water.
  4. Simmer for 30 minutes.
Ingredients Meatballs:
  • 1 poun ground beef or turkey
  • 1/2 cup dry breadcrumbs
  • 1/4 cup Happy Hemp
  • 1/4 teaspoon salt
  • 1/2 teaspoon worcester sauce
  • 1 small onion, chopped
  • 1 egg
Directions Meatballs;
  1. Preheat over to 350 degrees
  2. Combine all ingredients and shape into 20-24 meatballs 1 inch each.
  3. Place in ungreased cookie sheet.
  4. Bake 20-25 min or until light brown and cooked through.
Serve it up:
  • Veggie plate: Plate pasta and sauce. Sprinkle parmesan and happy hemp on top.
  • Meat Lovers: Plate pasta with sauce and add meatballs. Sprinkle Parmesan on top.
  • Pour wine for all and ENJOY!!!
