It’s summertime, and the livings easy. Same thing should apply to cooking in the kitchen– keep it easy breezy! I sure hate slaving over a hot stove when it’s 100+ degrees outside. I try to balance simple and convenient with fresh and healthy. Don’t up your take-out visits just because it’s hot out, expand your recipe rolodex and snag some new inspiration on Pinterest and your favorite food blogs!
Ingredients:
1 Cup plain greek yogurt
1/4 Cup chopped sun-dried tomatoes
1/4 Cup sliced green onions
1/4 Cup lightly packed basil leaves
2 Cloves garlic
1/2 Cup chopped walnuts; toasted & divided
Sea salt & pepper to taste
Happy Hemp seeds, raw to garnish
Directions:
1. Place tomatoes and garlic in a small food processor; process until tomatoes are in tiny pieces.
2. Add onions, basil and 2 tablespoons walnuts; pulse on and off until all ingredients are finely chopped.
3. Transfer to a medium bowl and stir in yogurt.
4. Season to taste with salt and pepper and sprinkle with remaining walnuts and Happy Hemp seeds.
