Jessica has been ranting and raving about her “World Famous Asian Chicken Salad” pretty much since she started working with us. This girl has seriously tried just about every Asian Chicken Salad between here and Colombia, MO. If you didn’t guess already, that’s her favorite kind of salad. So when she told us how ah-mah-zing her salad was, we knew it was going to be the real deal. I figured she’s been around me long enough, some of my japanese ways might have rubbed off on her. She’s taken her favorite ingredients from each salad and created her own masterpiece! Whether it’s famous worldwide or just at the Happy Hemp office is a blurred line. I can honestly say that after trying it, it is totally THE BEST ASIAN CHICKEN SALAD you’ll ever make. (:
1 Cup broccoli slaw mix
1/2 Rotisserie Chicken, chilled
1 Tomato, cubed
1 Green bell pepper
1/2 Cup fresh basil
1/2 Cup cilantro
1/2 Cup edamame, shelled
1/4 Cup cashews
1/4 Cup Happy Hemp seeds, raw
1 Cup ginger soy vinaigrette
1. Chop chicken, tomato, cucumber, basil, cilantro, and cashews.
2. Chop green bell pepper into long thin slices.
3. Mix all vegetables and dress with ginger soy vinaigrette to taste.
4. Garnish with chopped cashews and Happy Hemp seeds.
