Happy Lemon Rosemary Roasted Potatoes

 Food is more than just fuel, it’s a very powerful tool. One of the most thoughtful things you can do for someone is cook them a nice meal made with extra love. It’s a thoughtful way to show your appreciation. My mom always said, the way to a man’s heart is through his stomach, but I’m pretty certain that goes for just about anyone! Nothing compares to a home cooked meal. It cures even the saddest blues. It reminds us of everything from our childhood, to a first date, to the time you were in charge of cooking your first Thanksgiving dinner.

So yesterday, when a friend of mine was suffering from Monday blues, I had the perfect remedy…comfort food from the heart!



4 Yukon Gold potatoes

2 Sprigs of rosemary

1 Garlic clove

1/4 Cup Happy Hemp seeds, raw

Fresh squeezed lemon juice

Olive oil

Salt & Pepper



1. Preheat oven to 350° degrees.

2, Dice potatoes in quarters.

3. Toss potatoes in large bowl with all remaining ingredients.

4. Evenly spread on baking sheet.

5. Bake for 45 minutes, tossing every 15 mins or so.
