There are so many things to love about a good chimichurri sauce: the simplicity, the complimentary flavors, the fresh ingredients, the diversity of uses, the nutritional aspect, and most importantly, the taste! It’s one of those sauces that just keeps getting better the longer you let it sit.
1/2 Cup red wine vinegar
1 Tsp kosher sea salt
3-4 Garlic cloves, minced or thinly sliced
1 Shallot, finely chopped
1/2 Jalapeño, finely chopped
2 Cups minced fresh cilantro
1 Cup minced fresh flat-leaf parsley
1/3 Cup finely chopped fresh oregano
2 Tbsp Happy Hemp seeds, raw
1/2 Extra-virgin olive oil
1/4 Hemp oil
1. Combine vinegar, salt, garlic, shallot, and jalapeño in a medium bowl and let stand for 10 minutes.
2. Stir in cilantro, parsley, happy hemp seeds and oregano.
3. Using a fork, whisk in oil.
**For best results, let sit for about 2 hours.
