- 12 gluten free chocolate chip cookies (Our favorite recipe)
- 1 pint dairy free vanilla ice cream (We used Nadamoo)
- 1/3 C Happy Hemp seeds, raw
- Sandwich the ice cream in between two cookies and roll in Happy Hemp seeds
- Wrap in plastic wrap. Freeze for at least 1 hour.
Yields: 6 ice cream sandwiches
